Fashion meets coffee!
We met over a cup of coffee. And were not surprised about the similarities we found in how
we approach our professions.
A perfect cup of coffee requires creativity, passion and a lot of discipline. Growing coffee is hard work, and at the same time creativity and experimentation are crucial to finding ever new ways of fermentation in the preparation process. As roasters, it is our job to develop the perfect roasting profile to let the coffee shine in all its facets. Finally, the preparation is just as crucial as all the steps before. Following a well-developed brewing recipe with discipline is crucial in this process.
The production of garments is also a kind of art. Starting with the idea of
creating a piece that is timeless, has excellent quality, fits perfectly and
gives its wearer many moments of pleasure. Then it's about choosing the perfect materials and finding the right accessories, labels, cuts, details, etc. to go with it. And once the idea has come to life, it's the craftsmen who have a lifetime of experience in their field.
For us, appreciation is key and sustainability is not a specialty but a must!

ERNST comes with a utmost elegant coffee. The Arisha from Ethiopia is a fruity and floral coffee. Light and playful with notes of raspberry, red apple and jasmine. It combines a tangy acidity with a fine sweetness.

STEP 1: Choose your coffee
We would of course recommend the wonderful Arisha Filter
coffee :)
STEP 2: Preparation
2.1 - Rinse the filter paper with hot water to get rid of any papery taste.
2.2 - Discard the rinsing water!
2.3 - Weight 15g of coffee and grind it – for filter brewing medium grind size.
2.4 - Fill the coffee in the filter and tare your scale.
2.5 - Heat the water to 93-95°Celsius.
STEP 3 : Brewing
3.1 - Start the timer of your scale.
3.2 - Pour 30g of water and let the coffee bloom for until min. 0:30
3.3 - Pour up to 120g until min. 0:50
3.4 - Pour up to 190g until min. 1:20
3.5 - Pour up to 250g
3.6 - Pour continuously in small circles around the centre of the dripper.
3.7 - Coffee should be ready at min: 2:30
